PORRIDGE
KALIMOTO
Kalimoto is term of porridge and Simple food is served in the morning before people want to go into the garden to do activities every day, and in modern times such as now a food favorite in the eastern part of the island of Bali.
Ingredients:
1000 gr rice clean
500 gr young corn cornel, boiled
150 gr katuk leaves, boiled
200 gr spinach, boiled & coarse
3 pcs lemon grass
5 pcs salam leaves
10 ltr mineral water
125 gr salt
Crackers
Spicy:
150 gr shallot, chopped
100 gr garlic, chopped
50 gr chili, chopped
40 gr kencur root, chopped
15 gr shrimp paste, baked
30 ml oil
Method:
1. Wash the rice, clean and strain
2. Boiling of the water in pot and add rice, corn cornel, lemon grass, salam leaves, salt and stir constantly until all ingredient cook and smooth.
3. For spicy: heating the oil in pan and sautéing all spicy until aromatic coming out and cook .
4. Add the spicy in the kalimoto and stir until mix well.
5. Serve with boiled vegetable, crackers and fried shallot.
LEDOK
Ledok is term of porridge same as kalimoto , and in modern times such as now a food favorite in the round the islands of the Nusa Penida and surrounding areas in Bali.
Ingredients:
1000 gr rice clean
300 gr corn cornel, boiled
200 gr kidney bean local, boiled
1000 gr long bean , boiled cut julienne
1000 gr spinach, boiled cut coarse
350 gr bilis, fried
250 gr yellow bean, fried
500 gr crackers
6 pcs salam leaves
4 pcs stall lemon grass
15 ltr mineral water
150 gr salt
Spicy:
500 gr peanut, fried
200 gr shallot, fried
70 gr garlic, fried
60 gr eye chili, fried
30 gr shrimp paste, baked
100 ml cooking oil
Method :
1. All process make porridge same as kalimoto add kidney bean, corn cornel until cook smooth and mix well.
2. Make spicy: bland all spicy and reheating spicy again until little bit reduced and cook.
3. Serve ledok with spinach, long bean, bilis, yellow bean, crackers, fried shallot and add spicy for test.
